Les couper en petits d\u00e9s, mixer la moiti\u00e9 et r\u00e9server le tout.<\/p>\n\n\n\n<p class=\"has-dark-gray-color has-text-color\">Le risotto :&nbsp;dans une casserole fa\u00eetes revenir une \u00e9chalote hach\u00e9e dans deux bonnes cuill\u00e8res d&rsquo;huile d&rsquo;olive puis ajouter 400g de riz Carnaroli et cuire \u00e0 feu vif tout en remuant sans faire br\u00fbler les grains pendant 2 minutes.<\/p>\n\n\n\n<p class=\"has-dark-gray-color has-text-color\">Mouiller avec un bon verre de vin blanc sec et laisser \u00e9vaporer, puis ajouter 1,5 litre de bouillon chaud, louche apr\u00e8s louche en laissant fr\u00e9mir doucement.&nbsp;<\/p>\n\n\n\n<p class=\"has-dark-gray-color has-text-color\">Poursuivre la cuisson en remuant r\u00e9guli\u00e8rement, compter 16 minutes de cuisson au total.&nbsp;<\/p>\n\n\n\n<p class=\"has-dark-gray-color has-text-color\">A mi-cuisson, ajouter la pur\u00e9e de betteraves. En fin de cuisson, bien battre le risotto. Ensuite le laisser reposer couvert 2 minutes.
